Kamal Grant, owner of Sublime Doughnuts tweeted a link today to a bunch of videos done by Baking Buyer for its "Discovering America's Bakeries" series. You may notice chef Alon Balshan, of Alon's Bakery & Market, is also featured if you click around. In one of the videos, Grant details his personal baking philosophy and the risk he took by not having more traditional doughnuts available to the public. He says he wanted to fail on his own terms and approached his creative doughnut making with a "If you make it, they will come" strategy. We all know how well that laid back philosophy worked out for the postage stamp of a doughnut bakery.
