John Kessler, lead dining critic of The Atlanta Journal-Constitution, has announced the release of the paper's annual Fall Dining Guide on his blog, Food and More. In his announcement, Kessler gives us a preview of what's to come by teasing his "10 chefs who are making Atlanta a better place to eat" piece. First up? Chef Billy Allin of the newly relocated and expanded Cakes & Ale in Decatur. Says Kessler of Allin:
Allin’s menu changes often, and his cooking serves as more of a reaction to what is in season at any time than any preconceived cultural references. If pak choy is coming up in his garden, then he may combine it with tomatoes, cucumbers and sesame oil. Squash finds its way not into a creamy soup, but into a supremely weird — yet supremely tasty — salad with cubes of melon and a swipe of creamy ricotta. Maybe not every dish is a hit, but regulars know to give this place latitude.Also due out at the end of this week, Creative Loafing's 2011 Best of Atlanta, which, in the interest of full disclosure, I had a hand in writing.
