He's being put to work as "the new guy" at the event, but had a minute to chat about The Spence ("looking at" opening the first week of April), his upcoming cookbook, and a new project with the Cooking Channel. Blais also gave "props" to the ATL for both its "young, independent chefs" and institutions like Bachanallia. Also, he's a "fan boy of Tony Bourdain." Also, it's not snowing in the A today.
