Richard Blais was not almost assassinated at the New York City Wine and Food Festival, but he did do a couple interviews. The Atlanta chef told Esquire that with The Spence, he's "playing to the public more than playing to [his] own psyche or to just the critics," and that he "doesn't want to sound like a douchebag" but is "one part entertainer" in addition to being a chef and restaurateur.
