The Atlanta chef told Esquire that with The Spence, he's "playing to the public more than playing to [his] own psyche or to just the critics," and that he "doesn't want to sound like a douchebag" but is "one part entertainer" in addition to being a chef and restaurateur. Over at The Braiser, Blais reveals that he's had enough kisses from fellow cheftestapant Fabio Viviani and that he lives in a "family of princesses." [Esquire/The Braiser]
