Years ago, John Kessler issued a challenge to restaurants— to step their game up— and chef Nick Oltarsh, then of Lobby Bar and Bistro and ROOM at Twelve, accepted. The chef currently helms the kitchen at ONE Midtown Kitchen, and this week Jenny Turknett reviews the restaurant by addressing all the components of the challenge and ends up awarding it three stars. The end result? "Two years and another restaurant later, mission completed."
