Chef Adrian Villarreal, formerly of Joel and TAP, is joining Richard Blais's culinary team at The Spence. Villarreal was trained at Le Cordon Bleu in Paris and brings international influences from there, as well as his experience working in Mexico, to The Spence.
"I am really looking forward to Adrian joining the team. He is quite the talent and I have no doubt we will have a lot of fun creating memorable dishes," said Blais in a press release.
The Spence is on target for a May opening.
