Just in time for The Spence's highly anticipated opening tomorrow night, Richard Blais sent over the dinner menu for the lovely Eater readers' perusal. Highlights of the casual American fare include beet salad, duck egg, blue cheese, and wasabi; macaroni and headcheese; roast bone marrow & Texas toast; black sea bass with salsa vera cruz and kohlrabi; a "Juicy Lucy" burger, which has cheese sandwiched between two patties made with dry-aged beef; and pineapple upside down cake with foie caramel.
House-bottled cocktails will rotate often and the wine list has red, white, rose, fizzy, and post-meal offerings that are either "tried and true" classic or obscure and inspiring "leaps of faith." The Spence will also soon feature a feasting table, where meat will be carved and served tableside for groups.
