Kevin Gillespie, Gerry Klaskala, and Other Chefs Share What They Cook at Home

When you go Lure, you expect fried oyster sliders. When you dine at Aria, you might dine on crisped stuffed zucchini blossoms. But at home? If you're like most of us, you subsist mainly on boxed mac 'n' cheese, PB&J, and whatever's hiding at the bottom of the freezer. But what about the chefs—do they really make country-fried biscuit-breaded veal medallions for their families? Eater decided to find out.

“Honestly, I cook mostly nostalgic food at home. It's either country cooking like I grew up on or Midwestern dishes that my wife grew up with. I also really enjoy grilling at home, even though I do it all day at work.”

“Recently I’ve been cooking a lot of fish. I have a 3-year-old daughter and she’s tried smoked salmon and whitefish; she liked it! I go to the Grant Park Farmer’s Market on Sundays, buy everything and try to cook off that for the week. Sometimes I use the leftovers from Lure—I recently brought octopus and seafood sausage to a friend’s cookout.”

“I love to cook for family and friends. Anything and everything is fair game from tagines to BBQ. I love my Big Green Egg. It was a gift from Kevin Rathbun, which now I can’t imagine cooking without. Italian is my all-time favorite. I use a lot of family recipes. They bring back so many memories. I start with antipasto - lots of little tastes: my Aunt Jennie’s caponata, Aunt Millie’s stuffed artichokes, my mom’s marinated eggplant and then to my grandma’s veal meatballs and on and on. Cap it all off with some Limoncello and everyone’s singing Amore. Whoa-oh-oh!!”
