Shulman uses "food to chart the city's evolution," and the book, Eat this City: A Tale of the Fishers, Foragers, Butchers, Farmers, Poultry Minders, Sugar Refiners, Cane Cutters, Beekeepers, Winemakers, and Brewers Who Built New York "shows that basic food production has always been part of the development of ... all American cities."
