Local Three chef Todd Mussman, along with chef Jay Swift of 4th & Swift, chef Nick Melvin, and Gum Creek Farm's Tommy Searcy took home the championship at the Cochon Heritage BBQ competition this weekend. The team won best all-around barbecue for their meal, the highlight of which was Mussman's pig head gumbo with dirty rice calas. The menu had to showcase the whole pig in a "snout-to-tail" menu that included four meats and two sides. [EaterWire]
