Chef Nick Oltarsh describes what it's like to be behind the scenes of Sunday brunch at One Midtown Kitchen in five-minute increments. Here's an excerpt: "7:05 a.m.: Fireball of boiling steel-cut oatmeal erupts onto my arm creating permanent oatmeal scar. Saves me trouble of getting obligatory chef tattoo."
