Hugh Acheson is opening a new "quasi-Italian" restaurant in Savannah, which means, as he explained at the Southern Food Writing Conference, that it'll offer "food from the South cooked in an Italian manner." Previously, the restaurant was tentatively set to be called Vittoria; the restaurateur is now considering the Florence. The potential name, Acheson said, is a double entendre that refers to both the Italian city and the famous waving girl statue in Savannah. The restaurant is set to open in the spring of 2014 with a kitchen helmed by Kyle Jacovino, most recently the executive chef of Acheson's Athens restaurant Five & Ten. Acheson also owns the National in Athens and Empire State South here in Atlanta.
