Hector Santiago recently started as executive chef at Abattoir and has begun to put his own touch on many of the restaurant's dishes. Previous exec chef Brett Ashcraft, who took the lead in the kitchen after Tyler Williams left for Woodfire Grill, is still at the West Midtown eatery. Santiago says that fans of his previous Saturday-only burrito spot, El Burro Pollo, can expect to see more burritos in their future— once he is fully settled at Abattoir he does plan to do burrito pop-ups on off days (the restaurant is closed on Sundays and Mondays), though there's no timeline quite yet.
