Kimball House, in the historic Decatur Depot building, will open this fall. The Brick Store Pub and Leon's Full Service teams are behind the new restaurant and bar, which was inspired by turn-of-the-century American hotels and takes its name from the Kimball House hotel that was razed in the mid-1900s.
Both the kitchen and the bar will draw inspiration from the menus of old hotel bars and restaurants. Executive chefs Jeffery Wall and Philip Meeker, who met on the line Joel, will develop the food menu. "Dishes will show classic French techniques while still remaining playful," and the menu will showcase oysters and fresh fish.
Miles Macquarrie of Leon's is creating the cocktails— both classics and "culinary-inspired" originals— and the list of spirits, which includes absinthe and sparking and fortified wines. Michael Gallagher of Leon's and Brick Store Pub is in charge of the wine list, and Kimball House will have a rotating selection of craft beers behind the bar.
The restaurant is currently in the build out phase— note the new white exterior in the picture above, compared to the previous dark green incarnation— and is currently hiring for all positions. The application can be found here.
