Late last week, Top Chef alum and Gunshow chef Kevin Gillespie went to a Waffle House down in Newnan for a very special training session. The chef will compete in the Waffle House Smack Down at the Charleston Wine + Food Festival this weekend, and he headed to WH #1570 to learn the line and the lingo behind the iconic all-day breakfast chain. While there, he sat down with an official manual to get up to speed, made such dishes as omelets, hashbrowns, wraps, and breakfast sandwiches, and became acclimated with how Waffle House calls out orders— all the while wearing, of course, a camo Waffle House cap.
On Saturday, Gillespie will compete against defending champion Mike Lata of Charleston's FIG, Chris Shepherd of Underbelly in Houston, and Michael Hudman of Memphis's Andrew Michael Italian Kitchen. Atlanta native, Bon Appetit restaurant editor, and Waffle House "devotee" Andrew Knowlton will host and referee the event.
