Chef Ryan Smith of forthcoming restaurant Staplehouse will execute his final Four Plates pop-up menu at Octane Coffee in Grant Park this Sunday, May 25. Smith, also guesting as pastry chef at Empire State South these days, has been in the kitchen of the coffee shop on Sunday evenings for the last few weeks, creating small dishes with an emphasis on seasonal vegetables and charcuterie.
