GLENWOOD PARK — Wrapping up this season of Hired Guns, chef Joe Kindred of Kindred in Davidson, N.C., will join the Gunshow kitchen on November 17 and 18. Among the dishes on deck for the evening will be lamb tartare with uni aïoli, katsuobushi, and seeded toast and chicken thighs with baked egg, crispy rice, chimichurri, and hominy.
