From Michel Arnette, the restaurateur behind Haven and Valenza, Vero Pizzeria plans to open Tuesday, December 8, in Brookhaven. Matt Swickerath, who has run the kitchen at Valenza since 2007, is on board as executive chef, according to an official announcement. Vero will serve a menu of "custom pizzas, small bites, salads, and a selection of Italian beverages."
Pizzas will be made in the custom wood-burning Acunto oven, with scorching temperatures that should cook the pies in two minutes or less. The restaurant's temperature-controlled dough room will also provide pasta for Valenza, and Swickerath's menu will include six to eight pizzas with seasonal, local toppings. Small plates such as roasted seasonal vegetables, charcuterie, and salads will complement the pies.
Located on Dresden Drive between Haven and Valenza, the Neapolitan-style pizzeria will serve dinner daily. Hours are Sunday to Thursday from 5 p.m. to 10 p.m. and Friday and Saturday from 5 p.m. to 11 p.m.
