Proof Bakeshop, the forthcoming bakery from the Cakes & Ale team, will open in Inman Park on Monday, May 11. Proof will stage a soft opening during the first week of operation, and it will be fully up and running on Monday May 18.

David Garcia and Abigail Quinn, who currently run the bread and pastry programs for Cakes & Ale and the adjacent cafe/wine shop, will be in charge at the new bakery. Proof will serve as the central kitchen for baked items served at Cakes & Ale and the team's forthcoming Bread & Butterfly.

Look for a variety of baked goods, including country sourdough, honey oat bread, English muffins, hand pies, Danishes, French macarons, croissants, and seasonal muffins. A selection of sandwiches will be available as well. Located in the former Dough Bakery space at 100 Hurt Street NE, Proof will open Monday through Saturday from 7 a.m. to 6 p.m.

Bread & Butterfly, an "all-day European cafe," is on track to open this fall in Inman Park's Inman Quarter development.
