With Gunshow a major success and his next project, Revival, on the horizon, Kevin Gillespie has started his own restaurant group. Red Beard Restaurants will operate the two eateries and "ensure smart expansion for future development and provide consulting services to other food and beverage start-ups," Gillespie announced Monday.
"Trying to figure out how I would split my time between my two restaurants prompted me to ask myself, ‘How do I ensure that Gunshow doesn't fall off course when I'm at Revival?' It was then that I realized we could really benefit from having a single entity to hold our entire team to a certain standard and sustain the values that are important to us," Gillespie said in a prepared statement.
Joining the company as director of food and beverage is Marco Shaw, who previously worked with Gillespie in Portland, Ore. Former Gunshow GM M. Blake Morley is also on board, though his position was not specified.
Revival, Gillespie's upscale Southern restaurant, is opening soon in Decatur's former Harbour House Pub space.
