With American Food and Beverage shuttered, former chef Jeremy Miller has a new project in the works. Miller will launch Herbivore, a regular vegan pop-up inside Buckhead's Cafe Sunflower, reports the Atlanta Journal-Constitution. The pop-up will take place on Sundays, beginning February 21.

Miller told the AJC he has "gained a lot of respect for cooking vegan and raw vegan," throughout his career, and he doesn't plan to serve up meat substitutes. Instead, the chef will offer an a la carte menu of 12 to 15 small plates and three to four desserts, highlighting seasonality and global flavors.

American Food and Beverage opened in the Shops Buckhead Atlanta development in January 2015, and it abruptly closed last month. The shutter was part of a scaling-back effort by parent company Raised Palate, which is now focusing on its Texas restaurants.

Miller previously created Miller's Artisan Sodas and cooked at cooked at STK Atlanta and Bluepointe, as well as Thomas Keller's famed Napa Valley restaurant The French Laundry.
