Brush Sushi Izakaya opened to the public on Saturday, marking the debut for Jason Liang's first restaurant of his own. The former One Sushi + executive chef and Craft Izakaya sushi chef is hoping to execute a vision that's "more inline with the traditions of the Japanese sushi-ya than Atlanta is used to seeing."
Brush offers an extensive menu, ranging from yakitori and grilled entrees to a variety of "old world" and "new world" sushi rolls and omakase options. Liang is using top-end ingredients, selecting meats and fish from sources such as GrassRoots Farm in south Georgia, Riverview Farm in north Georgia and the Tsukiji Fish Market in Tokyo.
