Jason Liang, former One Sushi + executive chef and Craft Izakaya sushi chef, will open a restaurant of his own this weekend. Brush Sushi Izakaya, located at 316 Church St. in Decatur, held a friends-and-family night earlier this week, and it will officially open to the public Saturday night at 6 p.m.
Liang has partnered with John Chen, co-owner of The Buddha Bar Athens, SandBar Athens, The Double Barrel, and Kramer's Buckhead Atlanta. Jeff Banks, former lead bartender at The Luminary, is in at Brush to run the beverage program.
Liang has a vision that he calls "more inline with the traditions of the Japanese sushi-ya than Atlanta is used to seeing." Brush will serve yakitori made from GrassRoots Farm chicken and Edomae-style sushi sourced locally and from the Tsukiji Fish Market in Tokyo.
