Spencer Gomez, former Gunshow sous chef and Eater Young Guns class of 2016 semifinalist, is on board as chef de cuisine at Holeman & Finch Public House. Gomez joined Linton Hopkins's H&F kitchen last week, Atlanta Magazine reports, following a yearlong stint at Kevin Gillespie's heralded Glenwood Park restaurant.
"I didn't necessarily want to leave Gunshow," the chef told Atlanta. "I knew that Holeman had this availability, and it's just a really good fit. I've done a lot of charcuterie work and meat-focused dining."
Gomez is filling a void. Holeman & Finch's chef de cuisine position had been vacant following Chris Edwards's promotion to executive chef in December. Edwards took over as executive chef at Hopkins's flagship Restaurant Eugene in February. Gomez told Atlanta he will "sharpen what we have and fold things in as we go," but he has no plans for a major menu revamp at his new restaurant.
"Spencer joins Holeman & Finch as an exceedingly talented young chef, whose culinary passions align with ours," Hopkins said in a prepared statement. "I hold complete faith in him to not only uphold the vision of the restaurant, but also expand upon it by inventing new dishes and truly bringing Holeman & Finch to the next rock-and-roll level."
A representative for Gunshow tells Eater Atlanta that because of the unique nature of the restaurant's kitchen, there are no current plans to replace Gomez's spot on the line.
