The Kimball House team has been working on expanding the restaurant's space for a while, and now a backroom side project is ready to host devotees of bivalves and cocktails. Bonanza opens to the public this Friday night, co-owner Miles Macquarrie tells Eater Atlanta, serving as a weekend cocktail lounge in the back of the building that houses Kimball House.

"The room has its own entrance, bathroom, kitchen, and cocktail station," Macquarrie says. "It will be pretty casual from a service standpoint and the kitchen will be focused on cheese, charcuterie, and a small selection of composed plates and raw items. We will be baking all bread in house and, of course, oysters and caviar service will be available."

Cocktails at Bonanza — "most will serve as perfect aperitifs," according to Macquarrie — are unique to the lounge and utilize ingredients from the Kimball House garden. There's an extensive wine selection, and a small beer list is composed of "awesome and some rare bottles."

Hours at Bonanza are 6 p.m. to close. When it's not open to the public on weekends, the lounge will serve as a private-dining space. Macquarrie says the name is an homage to the Big Bonanza Saloon that once resided at the original Kimball House Hotel. Take a look at the menu below.
