Decatur Square is getting a new restaurant in the spring. Chef/owner Pasquale “Pat” Pascarella (formerly of The Optimist) and Gabriele Besozzi are partnering to open The White Bull on East Court Square next door to Brick Store Pub.
The restaurant’s name was inspired by American novelist and lover of classic daiquiris Ernest Hemingway who often referred to the blank page as “the white bull”. The name of the 75-seat restaurant and bar seems to have also inspired the interior design, which will focus on the use of natural light and a clean, neutral color palette.
Pascarella, whose previous work includes chef Eric Ripert’s Le Bernardin in Manhattan and ownership in the Italian restaurant Bar Sugo in Norwalk, Connecticut, says the menu will lean toward “simple, farm-forward American fare.”
No menu is available yet, but diners should expect to see at least 15 seasonal dishes with five of those being pasta made from flour milled at the restaurant.
