Fans of chef Hector Santiago’s El Burro Pollo burritos have a reason — beyond margarita specials — to celebrate this Cinco de Mayo. On Friday, Santiago will revive Burro Pollo as a one-day pop-up at El Super Pan, his Ponce City Market sandwich shop. The chef will be serving burritos from 5 p.m. to close.
It’s the second year in a row Santiago has transformed Super Pan into Burro Pollo on May 5. Both projects, along with the chef’s Pura Vida restaurant, originally operated in Poncey-Highland prior to closing in 2012. Before starting work on Super Pan's revival at Ponce City Market’s Central Food Hall, Santiago created the menu for Big Sky Buckhead and served as executive chef at Anne Quatrano's now-shuttered Westside Provisions District restaurant Abattoir.
