In other Clermont news, Jeb Aldrich has been tapped as the executive chef of the hotel’s still unnamed restaurant and rooftop bar. Both concepts will be operated by Charleston-based Indigo Road restaurant group. Indigo already runs Colletta and Oak Steakhouse at Avalon in Alpharetta along with O-Ku on the Westside and its soon-to-be neighbor Donetto on Brady Avenue.
Aldrich, son of Noble Fin’s Jay Swift, has just returned from Charleston where he has spent the last month working with Steven Palmer in his Indigo Road restaurants. The research trip allowed the chef to learn more about how the group’s culture and various dining concepts operate. Aldrich had previously worked alongside his father for 10 years before departing Noble Fin at the end of June to work with Palmer in Charleston.
According to an article published by Atlanta Magazine on Thursday, Aldrich says the Clermont Hotel is set to open sometime in January 2018. The 90-seat, “French-style brasserie” will be open daily for dinner and Sunday brunch.
