Chef Wilson Gourley (formerly of 8ARM) has found a new kitchen—albeit temporarily. Gourley is the latest chef to pop up at cycling shop (and restaurant incubator) the Spindle at Studioplex in the Old Fourth Ward.
Gourley left his post at 8ARM in mid-March after a little over a year. He’s known for fresh approaches to breakfast and lunch dishes like the grain bowl, breakfast salads, and sandwiches. Gourley told Eater Atlanta last month his reason for leaving was simply due to being “ready for a new challenge.”
Part of that new challenge includes his pop-up at the Spindle. He’s continuing his creative takes on the daytime meal, such as an enticing (slightly overindulgent) sourdough pancake breakfast sandwich consisting of soft scrambled eggs, maple hot sauce, and bacon.
The yet-named pop-up is currently running this Friday and Saturday and April 24 - 28 from 11:30 a.m. to 7:30 p.m. each day. Gourley says he hasn’t locked down dates for May yet, but to stay informed via Instagram.
