Watchman’s Seafood & Spirits, the restaurant and cocktail bar from the team behind Decatur’s Kimball House, is opening on June 19 at Krog Street Market. The restaurant is putting the finishing touches on the former Luminary space next door to Ticonderoga Club. Executive chef Daniel Chance (W.H. Stiles Fish Camp, Bacchanalia, Star Provisions) will lead the kitchen.
Longtime Kimball House bartender Adrian Fessenden-Kroll is moving over to Watchman’s to run the bar program. Kate Flowe, formerly of Staplehouse’s cocktail spot Paper Crane Lounge, is also behind the bar.
Watchman’s food menu plans to deep dive much further into sustainable seafood than its Decatur sibling and will emphasize seafood from the Gulf of Mexico.
Kimball House and Watchman’s partner Bryan Rackley transformed his passion for Southern oysters into advocacy when he helped co-found Oyster South in 2014. The non-profit organization is dedicated to creating sustainable oyster farming practices and preserving and protecting the bivalves’ coastal environments.
Rackley co-owns Kimball House and Watchman’s with Matt Christison, Miles Macquarrie, and Jesse Smith.
The crew recently gave Watchman’s Instagram followers a super quick preview of the space and its bright and airy coastal vibes. Hanging plants, an oyster bar, a covered patio, and crisp white booths and walls paired with sea green bars stools and chairs can be seen in the video.
