Chef Nhan Le’s (8ARM, Octopus Bar) new coffee shop Three Heart Roastery is now open on the Eastside Beltline. The shop’s walk-up window is located just off the trail in the back corner of Paris on Ponce on Ponce de Leon Place behind 8ARM. However, Three Heart is still determining its permanent hours.
Three Heart opened last Friday in conjunction with a photoshoot taking place by mobile art project Inside Out Project. Crowds gathered outside the shop for coffee and to have their portrait taken. Inside Out travels the country taking portraits of people while promoting civic engagement among America’s young people through art. Portraits taken during Friday’s opening are displayed on the wall next to Three Heart at Paris on Ponce along the BeltLine. Their current project called “Inside Out/Vote” is hoping to empower more young people to get out and vote in the upcoming midterm elections
In addition to coffee drinks and espresso, Three Heart’s menu features watermelon snow—frozen, shaved-to-order watermelon served with an assortment of toppings. The coffee shop plans to serve beignets once the fryer is installed later this week along with other seasonal food offerings. Three Heart is also roasting and selling its own coffee beans.

The inspiration behind the coffee shop’s name comes from the three hearts an octopus possesses and is in keeping with Le’s other mollusk-themed restaurants: 8ARM and Octopus Bar.
