Gourmet grilled cheese container restaurant opens in Capitol View

A new container restaurant called Skilled Cheese opened at Triton Yards Food Truck Park in the Capitol View neighborhood. It’s the first of three permanent container restaurants planned for the food truck park. Triton Yards owner Trent White tells Eater the other two container restaurants should open this summer.

The menu for Skilled Cheese currently features just three sandwiches, including the Filet-Me-On made with filet mignon, roasted red peppers, grilled onions, and Swiss cheese and munster drizzled in truffle oil. People can pair sandwiches with a bowl of tomato bisque. Skilled Cheese is currently open Tuesday - Sunday, 12 p.m. to 9 p.m. Order online for takeout. Masks required.
