Chefs Ron Hsu and Aaron Phillips, the owners behind Candler Park tasting menu restaurant Lazy Betty and forthcoming Vietnamese restaurant and bakery Juniper Cafe, are getting into the pizza and pie business. Humble Pie, a restaurant serving wood-fired pizzas, pot pies, and a variety of dessert pies, opens at the Interlock on Howell Mill Road next spring.
Hsu and Phillips, along with beverage director Carl Van Tyle Gilbert, tapped chef Evelyn Ling to lead the kitchen at Humble Pie. Ling, who is also Hsu’s cousin, was most recently the executive chef at Anne Quatrano’s Pancake Social at Ponce City Market.
Much of the lunch and dinner menu for Humble Pie will center around vegetables, like roasted cauliflower steak, and other local and in-season ingredients, including grains from Athens-based farm DaySpring Farms for making whole wheat and sourdough pizza doughs. Expect wood-fired pizzas such as broccoli and cheddar, loaded baked potato, and a Cajun-inspired pie featuring Georgia Royal Red shrimp on the menu here.
Look for cocktails and mostly natural and biodynamic wines and dessert wines from the bar, with many wines available on tap and by the glass and a selection of local beers and ciders, some specially made for Humble Pie from Orpheus Brewing, Wild Heaven Beer, Three Taverns Brewery, Good Word Brewing & Public House, and Urban Tree Cidery.
Designed by Praxis3, Humble Pie will feature several seating areas throughout the 4,300-square-foot space, including a counter with views of the wood-burning pizza oven, an upstairs mezzanine, and patios with indoor/outdoor bars.
Located across from Westside Provisions District, the $450 million Interlock complex on the corner of Howell Mill and 14th Street includes apartments and newly opened boutique hotel the Bellyard and incubator space from Georgia Technology Ventures and a location of co-working company WeWork. Locations of Saint-Germain Bakery and Cafe, mini golf bar and restaurant Puttshack, and Velvet Taco and cocktail bar and lounge Drawbar at the Bellyard Hotel have already opened. Outdoor bar Holiday Bar, self-service beer and cider bar Pour Taproom, Miami resort-style pool, bar, and restaurant venue Leave of Absence, and a second location of Cathy’s Gourmet Ice Cream Sandwiches are all expected to open at the Interlock this fall.
Hsu and Phillips open their next restaurant, Juniper Cafe, at Westside Village in Bolton later this fall. The restaurant will serve pho, noodle salads (bún), banh mi, sausages, and summer rolls as well as fresh pastries and shaved ice desserts. In addition to coffee, tea, and house-made sodas, look for cocktails using Vietnamese flavors and ingredients from Gilbert and beer and French and American wines.
