Living in a region that is known for all things fried, some may think it is difficult to find gluten-free fried chicken in Atlanta, but they are mistaken. Light, flaky, moist, and flavorful gluten-free fried chicken is on the menu at five local restaurants where caution is taken to prevent cross contact.

An interesting twist to using batter made from gluten-free flours for fried chicken is that it produces a crisper crust. How? Gluten-free flours don't absorb grease the way gluten flour does.
